Baxlo Haugh tester will allow you to quickly and accurately determine the quality of the coating of egg albumin. This
micrometer allows you to perform the Haugh test, which is the most internationally used for determining the freshness
of the egg.
The results are expressed in Haugh units and are obtained by measuring the height of the albumen and relating it to
egg weight in grams.
Baxlo micrometer is graduated in tenths 0 of a millimeter which allows very accurate results in the Haugh test. It has
been carefully designed to enable you to make measurements quickly and easily.
MAKING THE MEASURE:
Operation is extremely easy. You simply must break the egg on a flat surface and apply the instrument on the top of the
albumen (usually 1 cm of the yolk) until the probe comes into contact with it.
To determine the quality of Haugh units you should apply the following formula: Hu = 100 * log (H – 1.7W to the power of 0.37 + 7.57)
Where:
• Hu = Egg quality in Haugh units
• W = Egg weight in grams
• H = Height of the albumen in mm
The result should be a value between 20 and 110 Haugh units.
